When I started my restaurant, I knew that there would be expenses. In fact, I had prepared well for most of them, talking to fellow chefs and restaurant owners. With their help, I was able to get organized and make a budget that would actually work. However, I didn’t count on Hobart parts costing so much. In fact, when my Hobart meat slicer stopped working, I was relieved to find that only one part was broken. However, name-brand parts cost far more than I could have ever imagined. I wasn’t able to fix that slicer for a month! I guess I’ll need a new budget.
